Mongolian Braised Alltech Angus Short Rib

Mongolian Marinade

  • 1/2 cup hoisin sauce
  • 1/2 tablespoons soy sauce
  • 1/2 tablespoons sherry vinegar
  • 1/2 tablespoons rice vinegar
  • 1 scallion, minced 
  • 1/2 teaspoons black bean chile sauce
  • 1/2 teaspoons peeled and grated fresh ginger
  • 1/2 tablespoons minced garlic
  • 3/4 teaspoon freshly ground white pepper
  • 1 bunch cilantro leaves and stems, minced
  • 1 bunch scallions, sliced
  • 1 tablespoon sesame oil

For Alltech Angus Short Rib

  • 2 lbs beef short ribs
  • 1 red onion, julienned
  • 1 recipe Mongolian marinade
  • 2 bottles Kentucky Ale

Directions

Preheat oven to 275 degrees.  Brush all marinade over short ribs, cover with julienne red onion and Kentucky Ale, cover and braise for 3 hours, or until tender like pot roast.  Reduce braising liquid in a medium saucepan till it thickens enough to coat the back of a spoon.  Serve sauce over short rib.
